HPP can be used for solid, pasty and liquid products. The goods can be pressure treated in a flexible final packaging. This eliminates the need for any further treatment and means that the products meet the highest hygienic requirements.

In the case of high pressure treatment in a process packaging the product has to be final packaged under aseptic conditions.

The packed products are loaded into a high pressure vessel, which is then filled with a liquid such as water that is approved for food. The contents of the vessel are then compressed to the required final pressure. The pressure is transferred isostatically to the product and maintained for a precise period of time. Pressure treatment can take place at ambient temperature or the pressure vessel and the process liquid can be conditioned to temperatures between -10 and 95°C (14 to 203°F). Once the processing time has been reached, the pressure is released. The vessel can then be opened and the product removed.
The isostatic application of the pressure ensures that the product is treated homogeneously, independent of its size, structure and position in the vessel. Further on the isostatic pressure ensure that the product is not permanently deformed.
